Eine unglaubliche Geschichte
Eine unglaublich faszinierende Geschichte, die Sie unbedingt lesen müssen, erlebt und notiert von PETER SISSECK, der bereits mit seinem Pingus Weingeschichte geschrieben hat und nun ein neues Kapitel aufschlägt: „…For years, I had dreamt of making a white wine in Spain, but somehow, I never found exactly what I was looking for. I searched for historic vineyards, rich winemaking traditions, and a deeper sense of place—but missed what was right in front of me the whole time: Sherry! Spain’s most classical and iconic wine. The challenge, of course, was that this once-great region had suffered decades of decline. For over 50–60 years, Brandy production took precedence, and winemaking in its purest forms was pushed to the side... Everyone told me that vineyards didn’t matter in Jerez. That the many transformations the wines undergo— oxidative aging, biological aging—made their origins irrelevant. But as someone who believes deeply in terroir, that didn’t sit right with me. So, naturally, this project had to prove them wrong. From the start, we focused exclusively on Fino—the biologically aged style protected by a veil of flor yeast in not-quite-full barrels (botas, asthey’re called in Jerez). And crucially, we insisted the wines come from specific vineyards. We acquired land in Pago Balbaína—the classic pago for biologically aged wines—including: • Viña Corrales (11 ha) • Casilla Medina (20 ha) We also bought a small but extraordinary 2 ha parcel in Pago Macharnudo, known as the Montrachet of Jerez: Viña Cruz Since 2020, we’ve been bottling around 8,000–9,000 bottles of Viña Corrales each year, using wine from the oldest part of our solera. With an average age of 9–10 years, this wine has evolved beautifully. Each vintage has expressed the finesse, length, and saline minerality of Pago Balbaína in a more precise way… At Bodega San Francisco Javier, we remain full of energy and completely committed to the future of this historic region. In a world awash in industrialized, generic wines, authentic wines from heritage vineyards— grown organically and made with respect for tradition—can truly inspire the next generation. That is our mission. And we’re ready to do the hard work…”
Bereits die ersten Ergebnisse dieses ambitionierten Projektes setzten eine derartige Benchmark, dass SISSECK im Nu ausverkauft war! Seitdem hagelt es Höchstbewertungen.
